Job Purpose

Works closely with and reports to Executive Sous Chef. Ensuring that the core function of Pastries and baked products for all flights is done according to airline and recipe specification, within box time and food safety management parameters.

Key Responsibilities for Pastry Sous Chef

  • Lead team meetings, review performance, and determine actions.
  • Identify problem areas and implement decisions and actions required.
  • Set and ensure progress and achievement of performance targets.
  • Production planning and control using daily flight schedules and production plans.
  • Implement and enforce process and systems controls for effective operations.
  • Place stock orders on time based on figures provided by systems and planning.
  • Validate material requirements and interpret recipes to meet mass catering and daily forecasting.
  • Communicate with stores and QC to ensure proper use of expiring items.
  • Create job cards for production of baked goods.
  • Issue, validate, and handover CCP documents to QA at end of each shift.
  • Conduct daily meal tasting and specification compliance checks with junior chefs.
  • Ensure extras are prepared, signed, and handed over to the uplift team.
  • Participate in food safety audits and provide feedback on non-conformances.
  • Weekend standby and able to work shifts and irregular hours.
  • Monitor food safety management systems and SHEQ management systems.
  • Adhere to and ensure subordinates adhere to all security, SHE, and operational policies and procedures.
  • Ensure reporting, investigation, documentation, and action of safety incidents.
  • Create and prepare dessert menu items.
  • Supervise and train other chefs in the pastry/bakery kitchen.
  • Comply with all required SAP functions, stock rotation, and management.
  • Participate in month-end stock take and ensure proper stock management.
  • Conduct on-job training of staff and respond to customer complaints.
  • Comply with all company policies and legal requirements.
  • Implement additional reasonable instructions from time to time.

Candidate Requirements For Pastry Sous Chef

Qualifications:

  • Diploma in Hospitality and Professional Cookery or equivalent qualification from a recognized institution.

Experience and Training:

  • Minimum of 4 to 6 years’ proven experience as a Pastry Chef in a high-volume kitchen environment, preferably in the airline or catering industry.
  • Minimum 2 years’ experience in middle management.
  • Strong knowledge of pastry techniques, ingredients, and equipment, with a focus on quality and consistency.
  • Computer literacy.
  • Valid driver’s license.

Knowledge and Competencies:

  • Excellent communication skills (Verbal & Written).
  • Excellent leadership skills.
  • Good understanding of industrial relations.
  • Basic business management skills.
  • Knowledge of SAP is an advantage.
  • Knowledge of food safety management systems.
  • Knowledge of SHEQ management.
  • Ability to perform in a highly pressurized environment.
  • Strategic planning skills and continuous improvement in productivity.
